After having some friends over for some sensible LUF tasting, I was encouraged to jump on making breakfast ones sooner than later. We tested with several cheeses but Gruyere was the true winner! I’ve made what Andrew and I call “egg muffys” many times before. Putting eggs and literally whatever you have in the fridge into a cupcake tin and making the perfect microwavable egg bite is genius. These are the next level. Way more decadent and easier to hold, these are the perfect breakfast.
